Afternoon tea with Scones
GF Scones

Preparation time: 10 minutes
Cooking time: 10 minutes
Ingredients
2 cup rice flour
1 cup tapioca starch
¼ cup corn flour
¼ cup almond meal
¼ cup coconut flour
2 tsp baking powder
1 tsp bicarb soda
1 tsp guar gum
pinch salt
60ml coconut cream
125ml almond milk or as required
Directions
Pre-heat oven to 2200C and prepare your lined baking tray.
Put all dry ingredients (excepte coconut flour) into bowl and mix well.
Pour in milk and cream and lightly mix until the dough just comes together.
Spread some of the coconut flour out on your clean surface prepared for the dough. Lightly pat out your dough onto a lightly floured surface. This will be sticky.
Using your scone cutters, cut out the rounds of the dough. Being GF, you will want the dough to be thick as it wont really rise, so make sure your dough mix is patted out even but still with height.
Place your dough rounds into the baking tray close together, brush the tops lightly with milk and bake for 10 minutes or until risen and golden.
Serve with yummy fruits, spread and coconut cream.
